Raw Foods by Brocette Nicole

Hi I'm Nicole Fayta, Certified Nutritional Consultant and Natural Health expert for Timber Creek Farms.  Most people are pretty intimidated with raw foods when they are first introduced to them, but with these easy recipes, you'll be a pro in no time.

Fabulous Mango/Avocado Salad

2 champagne (Manilla) mangoes
1 avocado
1/2 large cucumber
large handful of cilantro
juice from 1/2 large lemon
pinch or two of sea salt
small pinch of cayenne pepper (optional)

Directions: Chop all ingredients and blend together for a fast and fabulous lunch.

Raw Potato Salad

1 jicama
1 yellow bell pepper
1/2 red onion
1 avocado
4-5 spears celery
3-4 sprigs fresh rosemary
juice of 1 lemon
1/2 cup tahini
2 tsp. each tamari & agave
2 tsp. parsley
1/2 tsp. cumin
dash of chili powder
1/2-1 tsp. natural sea salt
sweet relish if desired

Cube jicama, bell pepper, onion, avocado, and celery, and place in a large bowl.  Mince rosemary and put in bowl.  Set aside.  In a blender, put tahini, lemon juice, tamari, agave nectar, parsley, cumin, chili powder, and salt in.  Puree, and add to the veggies.  Mix thoroughly and add sweet relish if desired.  Chill for about an hour or longer.
