BruschettaBruchetta

Ingredients:

  • 2 tomatoes, cubed
  • 2 tbsp fresh chopped basil
  • 1 tsp balsamic vinegar
  • 4 tbsp grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 clove of garlic, crushed
  • 1/4 cup Vidalia onion chopped
  • satl to taste
  • ground black pepper to taste
  • French bread, cut into 1/4 inch slices

Directions:

In a medium bowl, mix all ingredients except for Parmesan cheese and bread together. Cover and chill in refrigerator for 8 hours or overnight. Toast the French bread in the oven on both sides till golden. Drizzle with olive oil and top with tomato mixture and Parmesan. Serve right away.
