Poached Pears & Vanilla Ice Cream

Ingredients

  • 2 cups water
  • 1 tbsp fresh lemon juice
  • 1/2 tsp vanilla extract
  • 1 (3 inch) cinnamon stick
  • 1 (3 inch) piece lemon rind
  • 1 large pear, peeled, halved and cored
  • 1 cup vanilla low-fat ice cream
  • 1/4 tsp ground cinnamon

Directions

Combine first 5 ingredients in a large saucepan, bring to a boil. Add pear halves, cover, reduce h eat and simmer 8 minutes or until tender. Remove pear halvs with slotted spoon, discard liquid. Place pears in a large shallow dish, cover and chill. Serve pear halvs with ice cream. Sprinkle with cinnamon if desired. Serves 2
