Vegan Split Pea Soup

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • 2 medium sized potatoes, peeled and cubed
  • 1 tsp curry powder (or to taste)
  • 1 cup split peas (soaked in boiling water overnight)
  • 4 cups water
  • Salt and fresh ground pepper to taste

Directions

Heat olive oil in a large soup pot. Saute carrot, onion, celery and curry for about 5 minutes. Add water, peas, potatoes, salt and pepper. Simmer stirring occasionally for 45 to 50 minutes or until thick and peas are soft. For a creamer soup, blend a little bit with a hand mixer before serving.
